Ingredients

3 tablespoons olive oil
1 large Spanish onion , chopped
2 -4 garlic cloves , chopped
227 g chopped tomatoes
1 tablespoon tomato puree
2 teaspoons sweet smoked paprika ( pimenton )
1 teaspoon hot smoked paprika ( pimenton )
1 pinch chili powder
1 teaspoon sugar
chopped fresh parsley , to garnish
900 g potatoes
2 tablespoons olive oil
Patatas Bravas is a popular tapas dish in Spain that is often enjoyed with a cold beer or glass of wine. The dish consists of crispy roasted potatoes that are smothered in a spicy tomato sauce. Instructions

1.Preheat the oven to 200°C/400°F.
2.Peel the potatoes and cut them into small cubes.
3.Place the cubed potatoes in a bowl and toss with 2 tablespoons of olive oil.
4.Spread the potatoes out on a baking sheet and roast in the preheated oven for 25-30 minutes.
5.While the potatoes are roasting, heat 3 tablespoons of olive oil in a large skillet over medium heat.
6.Add the chopped onion and garlic to the skillet and cook until the onion is soft and translucent, about 5-7 minutes.
7.Add the chopped tomatoes, tomato puree, sweet and hot smoked paprika, chili powder, sugar, and salt to the skillet.
8.Simmer the tomato sauce over low heat for 10-15 minutes until it has thickened and the flavors have melded together.
9.Once the potatoes are done roasting, transfer them to a serving dish and pour the tomato sauce over them.
10.Garnish the potatoes with chopped fresh parsley and serve hot.
