1 tablespoon olive oil

2 egg yolks
1 pinch sugar
1 teaspoon chili flakes
1 teaspoon Dijon mustard
1 tablespoon white wine vinegar
300 ml vegetable oil , about

Instructions

1.Preheat the oven to 200°C (180°C fan)/400°F/gas mark 6.
2.Boil the potatoes in a pan of salted water until tender, around 10-15 minutes.
3.Drain and leave to steam-dry in the colander for 5 minutes.
4.Place a non-stick roasting tin over high heat and add the cumin seeds, tossing for 1–2 minutes until fragrant.
5.Add the olive oil, potatoes, salt and pepper, and toss to coat.
6.Roast in the oven for 25-30 minutes, until golden brown and crisp.
7.For the chilli mayonnaise, whisk together the egg yolks, caster sugar, chilli flakes, Dijon mustard, white wine vinegar and a pinch of salt until well combined.
8.Gradually whisk in the vegetable oil a few drops at a time, then by small drizzles until the mixture thickens to a loose mayonnaise consistency.
9.Serve the Patas Bravas with the chilli mayonnaise and enjoy!
