1 ripe plantain , peeled and cut into 1-inch rounds
1 pinch salt

Instructions

1.Heat oil in a frying pan over medium-high heat.
2.Fry the plantain rounds until golden brown, approximately 3 minutes on each side.
3.Remove from the heat and use a slotted spoon to transfer the plantains to a paper towel-lined plate to absorb the excess oil.
4.Using a flat surface such as a cutting board or plate, press the plantains flat with a heavy object such as a can or a glass.
5.Refry the flattened plantains until they are crispy, approximately 2 minutes on each side.
6.Remove from the heat and sprinkle with salt before serving.
