1 egg , lightly beaten
1/2 cup parmesan cheese , grated
1 tablespoon olive oil
1 onion , chopped
3/4 lb ground turkey
1 cup tomato puree
1/4 cup beef stock
1/8 cup dry white wine
1/4 teaspoon ground cinnamon
1/2 teaspoon dried mint
1 egg , lightly beaten

1/8 cup all-purpose flour
1 3/4 cups milk

1 egg yolk , lightly beaten
1 tablespoon dry breadcrumbs
Pastitsio is a traditional Greek dish, consisting of pasta and ground meat in tomato sauce, topped with a creamy béchamel sauce and baked until golden. Instructions

1.Cook penne according to package instructions. Drain and set aside.
2.Preheat oven to 350°F.
3.In a large skillet over medium heat, heat olive oil then add chopped onion and cook until soft.
4.Add ground turkey to the skillet and cook until brown and no longer pink. Drain excess fat.
5.Add tomato puree, beef stock, dry white wine, ground cinnamon and dried mint and bring to a simmer. Cook, stirring occasionally, for about 15 minutes.
6.While the meat mixture is cooking, prepare the béchamel sauce. Melt butter in a saucepan over medium heat. Add flour, whisking constantly until smooth, about 2 minutes. Gradually pour in milk, whisking constantly, until sauce thickens. Remove from heat and stir in Parmesan cheese.
7.Beat egg yolk in a small bowl, and whisk in about ¼ cup of the white sauce. Whisk egg mixture back into the white sauce.
8.Stir pasta into the meat sauce. Pour meat and pasta mixture into an 8×8 inch casserole dish.
9.Pour the béchamel sauce over the meat mixture, spreading it out evenly to the edges. Sprinkle with additional Parmesan cheese and breadcrumbs.
10.Bake in preheated oven for 20 to 25 minutes, or until top is golden brown and bubbly. Let cool for a few minutes before serving.
