Ingredients

3 squab
4 tablespoons butter
1 onion , chopped
1 cinnamon stick
1/2 teaspoon ground ginger
2 tablespoons chopped fresh cilantro

6 eggs , beaten

12 tablespoons butter , melted
16 sheets phyllo pastry
1 egg yolk

Instructions

1.Preheat the oven to 375°F (190°C).
2.Melt butter in a skillet over medium heat. Add onions and cook until golden brown.
3.Add cinnamon stick, ground ginger, parsley, cilantro, turmeric, and sugar, stirring well to combine.
4.Add finely chopped squabs and almonds, stir to combine, and cook until squabs are cooked through.
5.Reduce the heat to low and add beaten eggs. Cook until eggs are set.
6.Remove from heat and let cool.
7.Brush melted butter onto each sheet of phyllo pastry and stack them.
8.Place the squab and egg mixture onto the center of the phyllo pastry stack.
9.Fold each side of the pastry stack over the filling to create a rectangular packet.
10.Brush egg yolk onto the top of the pastry packet.
11.Bake for 25-30 minutes until golden brown.
12.Dust with cinnamon and confectioners’ sugar, and serve hot.
