Instructions

1.Preheat oven to 375°F (190°C).
2.Cut the eggplant into 1/4 inch (0.6 cm) slices.
3.In a large skillet over medium-high heat, heat the oil.
4.Add the eggplant slices to the oil and cook until lightly browned on both sides, about 5-7 minutes total.
5.Remove from heat, squeeze a few drops of lemon juice over the slices and set aside.
6.In the same skillet over medium heat, cook the flour, stirring constantly, until it turns golden brown. Remove from heat and set aside.
7.In a blender, blend the tomatoes, onion, and garlic until smooth.
8.In the skillet over medium-high heat, add the blender mixture to the skillet and bring to a boil, stirring constantly.
9.Add the spices and simmer for 5-10 minutes or until the sauce thickens, stirring occasionally.
10.Grease a 9x13 inch (23x33 cm) baking dish and spread half of the sauce on the bottom.
11.Layer the eggplant slices on top of the sauce.
12.Sprinkle some parmesan cheese over the eggplant slices.
13.Add the rest of the sauce over the eggplants.
14.Top with more parmesan cheese.
15.Bake for 30-40 minutes or until the cheese is brown and bubbly.
