Ingredients

6 tablespoons unsalted butter , divided
1/4 cup all-purpose flour
3 cups whole milk
1/8 teaspoon nutmeg , grated
1/8 teaspoon salt , to taste
1/8 teaspoon white pepper , to taste
1 cup kefalotiri , grated , divided ( or Parmesan cheese )
2 egg yolks , beaten
1 lb penne ( or Greek macaroni no.2 )
Pasticcio is a traditional Greek dish that is similar to lasagna in that it consists of layers of pasta and cheese sauce. It is a popular dish in Greece and is often served at family gatherings and special occasions. The dish is typically made with penne or Greek macaroni no.2, which is then covered in a rich and creamy cheese sauce, made with kefalotiri or Parmesan cheese. Instructions

1.Preheat your oven to 350°F (175°C).
2.Boil the penne or Greek macaroni no.2 according to the instructions on the package, drain, rinse, and set aside.
3.Melt 4 tablespoons of butter in a large saucepan over medium heat. Whisk in the flour until smooth and cook for about 1 minute, stirring constantly.
4.Gradually whisk in the milk and keep whisking until the mixture comes to a boil and thickens. Reduce the heat to low, add the nutmeg, salt, and white pepper, and simmer for about 2 minutes, stirring occasionally.
5.Add 3/4 cup of the grated kefalotiri or Parmesan cheese and stir until melted. Remove from heat.
6.In a bowl, whisk the egg yolks and then add a little bit of the cheese mixture to temper them. Add the egg mixture to the saucepan and whisk thoroughly.
7.Add the cooked penne or Greek macaroni no.2 to the cheese mixture and stir until the pasta is coated.
8.Transfer the pasta to a greased 9x13-inch baking dish.
9.Melt the remaining 2 tablespoons of butter and drizzle it over the pasta.
10.Sprinkle the remaining 1/4 cup of grated kefalotiri or Parmesan cheese over the top of the pasta.
11.Bake the Pasticcio for about 30-40 minutes or until golden brown on top.
