Instructions

.Peel the plantains and slice them lengthwise using a mandoline slicer.
.Place a frying pan over medium heat and pour enough olive oil to cover the bottom.
.Lightly fry the sliced plantains until they turn golden brown, about 3 minutes on each side, and set aside.
.In the same frying pan, add chopped onions, garlic, and minced scallions. Cook until the onions turn translucent, about 5-7 minutes.
.Add sliced mushrooms, red and yellow pepper, and continue to cook until the vegetables are tender, about 7-10 minutes.
.Add the chopped olives and capers to the vegetable mixture, season with adobo, oregano, cumin, and sazon goya packets. Mix well, and set aside.
.Preheat your oven to 375°F.
.In a greased baking dish, assemble the pastelon by covering the bottom with a layer of fried plantains. Then, add a thin layer of the cooked vegetables, followed by a layer of beaten eggs. Sprinkle with shredded cheddar and mozzarella cheese.
.Repeat steps 8-9, layering the plantains, vegetables, eggs, and cheese until all ingredients have been used up.
.Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 20 minutes until the top layer is crispy and golden brown. Let it cool for 10 minutes before slicing and serving.
