Ingredients

2 lbs lean ground beef
1/2 large white onion , diced
sofrito sauce ( use your own , I did recipe # 207700 ) or use goya 's sofrito sauce
1/4 cup tomato sauce ( I used Hunt 's )
sazon goya , with annato and cilantro
2 garlic cloves , minced
olive oil or vegetable oil
2 eggs
1/2 cup corn niblets ( from the can , that is the way the recipe is written )
1/2 cup French style green bean ( from the can , that is the way the recipe is written )
4 -6 ripe plantains ( you should see lots of black , that is sweet )
4 -6 ounces cheddar cheese ( optional )
Pastelón de Plátano Maduro is a Puerto Rican dish that has a special place in many people's hearts. Instructions

1.Preheat the oven to 375°F.
2.Brown ground beef in a large skillet over medium-high heat. Add onion, sofrito sauce, tomato sauce, sazon goya and garlic, stir well and cook for a few more minutes.
3.Reduce heat to medium and stir in corn niblets and French style green bean. Cook for another minute and turn off heat. Leave in the skillet.
4.Peel plantains and slice into approximately 1/4 inch thick rounds. Heat 1/2 inch of oil over medium heat in a frying pan and fry plantains until golden brown. Remove and place on paper towels to drain.
5.In a separate bowl, whisk together the eggs and set aside.
6.In a nine-inch by thirteen-inch baking dish, cover the bottom with a layer of the fried plantains. Add a layer of the meat mixture, then a layer of cheese, and repeat the layers until all is used up.
7.Pour the whisked eggs over the top of the final layer. Be sure to spread them evenly across the top to cover everything.
8.Bake for approximately forty minutes, or until eggs have set and top is golden-brown in color. Let cool for a few minutes before slicing and serving.
