The Pastelito De Guayaba is a beloved pastry in Cuban culture and is often served as a dessert or as a snack with coffee. The pastry has a sweet and savory taste that comes from the combination of guava and lard in the dough. The guava fruit is cooked down with water to make a smooth and delicious filling that is then sandwiched between two layers of pastry dough. The dough is then crimped together to create a beautiful diamond pattern. The Pastelito De Guayaba is a perfect pastry for any occasion, whether it's for a family dinner or a special event. It's easy to customize by adding your own spices or by experimenting with different pastry doughs to suit your individual tastes.

Instructions

.In a large mixing bowl, blend the guava shells in syrup with 4 ounces of water. The mixture should be smooth with no chunks of guava left.
.In another mixing bowl, cream the butter or lard and salt together until fluffy. Add in the flour slowly to create the dough. If the dough is too dry, add more water in small amounts until it reaches a soft consistency.
.Preheat the oven to 375°F and cover a baking sheet with parchment paper.
.Roll out the dough to approximately 1/4 inch thickness and cut it into square pieces.
.Place a spoonful of the guava mixture in the center of each square and fold the sides over it. Use a fork to crimp the edges closed.
.Brush the beaten egg mixture over each pastelito before placing them on the prepared baking sheet.
.Bake them for about 25 minutes or until the pastries turn golden brown in color.
.In a saucepan, heat equal parts sugar and water to make the simple syrup. While the pastries are still warm, brush them with it.
.Serve the pastries warm as a delicious dessert!
