2 cups yogurt , sheep 's milk
1 cup kefalotyri , coarsely grated ( or substitute 1/2 cup coarsely grated gruyere and a 1/2 cup coarsely grated reggiano )
1/4 cup oregano ( Greek or fresh )
1/4 cup thyme , fresh

Instructions

1.In a large pot, cook fettuccine in a salted boiling water until al dente, according to package instructions. Drain the pasta and reserve 1/2 cup of pasta water.
2.In a large skillet, melt butter over medium heat. Add sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, for about 20 minutes.
3.Combine cooked pasta, caramelized onions, yogurt, and reserved pasta water in the skillet with the onions. Toss everything until evenly coated.
4.Add grated kefalotyri (or Gruyere and Reggiano mix), oregano, and thyme. Toss until the cheese is melted and everything is heated through.
