Ingredients

2 large fennel bulbs
2 onions
1/2 cup extra-virgin olive oil
1 cup white wine
1 package linguine pasta
4 roma ( plum ) tomatoes , seeded and cut into 1/4-inch dice
2 lemons , juiced
1/4 cup pine nuts
1 cup freshly shaved Parmesan cheese

Instructions

1.Slice the fennel and onions thinly after removing the tough inner core from the fennel.

3.Add the wine and reduce until the liquid is almost gone.
4.During this process, cook the linguine pasta in salted boiling water for 8-10 minutes until it is tender.
5.Combine the cooked pasta with the fennel mixture, diced tomatoes, and lemon juice in a pan.
6.Toast the pine nuts in a small frying pan until golden brown then add them to the pan with the Parmesan cheese and freshly ground pepper.
7.Mix well and serve hot.
