Ingredients

3 cups flour
1 teaspoon baking powder
1 cup butter , room temperature
1/3 cup sugar
2 egg yolks
2 tablespoons brandy or 2 tablespoons cognac
1 tablespoon grated lemon , zest of
1 teaspoon vanilla
1/2 teaspoon lemon extract or 1/2 teaspoon almond extract
1 1/2 cups sour cherry jam or 1 1/2 cups apricot jam
1/4 cup blanched slivered almond

Instructions

1.In a large bowl, sift the flour and baking powder together and set aside.
2.In a separate bowl, cream the butter and sugar together until light and fluffy.
3.Add the egg yolks to the butter mixture and beat well.
4.Mix in the brandy, lemon zest, vanilla, and lemon extract or almond extract.
5.Gradually add the dry ingredients to the butter mixture and mix until well combined.
6.Divide the dough into two and wrap in cling wrap.
7.Refrigerate for 30 minutes to 1 hour until firm.
8.Preheat the oven to 175C and grease a 24cm tart or cake pan.
9.Roll out one portion of the dough and press it into the pan.
10.Spread the jam evenly over the dough.
11.Sprinkle the slivered almonds over the jam.
12.Roll out the second portion of dough and carefully place it over the filling.
13.Trim the edges and press them together to seal.
14.Cut a few slits in the top pastry to allow steam to escape.
15.Bake for 40 to 45 minutes until golden brown.
16.Allow to cool for 10 to 15 minutes before slicing.

This traditional Greek dessert is easy to make and is delicious served warm or cold.
