Ingredients

1 tablespoon olive oil
12 ounces sweet bulk Italian sausage
1 stalk celery , diced
1/2 yellow onion , chopped
3/4 cup dry elbow macaroni
1/4 cup tomato paste
3 cups chicken broth , or more as needed , divided
Salt and freshly ground black pepper to taste
1/4 teaspoon crushed red pepper flakes , or to taste
1/4 teaspoon dried oregano
3 cups chopped Swiss chard
1 can cannellini ( white kidney ) beans , drained
1/4 cup grated Parmigiano-Reggiano cheese , plus additional for serving , or to taste
Pasta Fazool, also known as Pasta e Fagioli, is a classic Italian soup that is generally made with pasta and beans. This version includes the addition of sausage and Swiss chard to give the soup a heartier texture and more complex flavor. This dish is a perfect meal for a chilly evening and can be made in a large batch to be enjoyed throughout the week. Instructions

1.Heat olive oil in a large saucepan over medium heat.
2.Add sausage, celery and onion, breaking up the sausage into small pieces and sauté until the sausage is browned and the vegetables are soft.
3.Stir in the macaroni, tomato paste, 2 cups of the chicken broth, salt, black pepper, red pepper flakes, and oregano.
4.Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
5.Add the Swiss chard and beans to the pan, and stir to combine.
6.Add remaining broth, stir and bring to a boil.
7.Reduce heat to low and simmer the soup until the pasta and vegetables are tender, approximately 10 more minutes.
8.Stir in grated Parmigiano-Reggiano cheese and serve with additional cheese if desired.
