Ingredients

8 ounces penne pasta ( tubetti , short penne etc )
12 ounces peas
1 1/2 teaspoons herbes de provence
1/4 cup white wine
one small onion , finely chopped
2 tablespoons olive oil
1 vegetables or 1 chicken bouillon cube
1 teaspoon salt
parmesan cheese , grated
Pasta E Piselli, or pasta with peas, is a classic Italian dish that is often made with pancetta or ham for added flavor and protein. However, this vegetarian version skips the meat and relies on the sweetness of peas and the aroma of herbes de provence to make a satisfying pasta dish. It's a perfect weeknight meal that can be made in under 30 minutes with minimal effort.

Instructions

1.Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions.
2.While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for 5 minutes until softened but not browned.
3.Add the frozen peas, white wine, herbes de provence, bouillon cube, and salt. Cook, stirring occasionally, for about 5 minutes until the peas are heated through and the liquid has mostly evaporated.
4.When the pasta is al dente, reserve 1 cup of cooking water and drain the rest. Add the cooked pasta to the skillet with the peas and onions. Toss well to combine.
5.If the pasta seems too dry, add a bit of the reserved pasta water until it reaches your desired consistency.
6.Plate the pasta, top with grated Parmesan cheese, and serve immediately.
