1 1/2 cups small-cut pasta ( or broken long-cut pasta , shells , ditalini , broken spaghetti , etc )

Instructions

1.In a large pot, cook the pancetta in olive oil over medium-high heat until crispy.
2.Add onion, celery, garlic, pimiento, cayenne pepper, and anchovy paste (if using) and cook until onions are translucent.
3.Add diced tomatoes, tomato paste, chicken broth, sugar, bay leaf, and dried basil.
4.Stir in the cooked chickpeas and pasta. Simmer until pasta is tender.
5.Season with salt and pepper to taste.
6.If the soup is too thick, add water to reach desired consistency.
