1 can cannellini beans , drained
5 tablespoons pesto sauce
1/2 lb bacon , cubed
2 tablespoons onions , chopped
1 lb gemelli pasta
6 tablespoons olive oil , divided
1 bunch basil
1/2 lb green beans , young
2 medium potatoes , peeled and diced
3 tablespoons pine nuts , toasted
1/2 teaspoon black pepper ( to taste )
6 tomatoes , seeded and cut into strips
1/4 lb parmesan cheese
1/2 teaspoon salt ( to taste )

Instructions

1.Start by cooking gemelli pasta in a large pot of boiling salted water for about 9-11 minutes or until al dente.
2.In a large skillet, cook bacon over medium heat until it becomes crispy. Once done, remove from heat and place it on a plate lined with a paper towel.
3.To the same skillet with bacon grease, add 5 tablespoons of pesto sauce, onions, and drained cannellini beans. Cook on medium heat for about 5 minutes or until beans become slightly tender.
4.While pesto sauce and beans are cooking, dice green beans into small pieces, and similarly dice peeled potatoes into small cubes.
5.Add green beans and diced potatoes to the skillet. Stir all ingredients and add 1/4 cup water to the skillet. Place a lid on top of the skillet and let vegetables cook until they are tender, usually around 10 minutes.
6.Once vegetables are cooked, thinly slice tomatoes and add them to the skillet, followed by diced basil and crispy bacon. Stir all ingredients, and add salt and pepper to taste.
7.Strain the cooked gemelli pasta and add it to the skillet with vegetables and bacon. Drizzle 2 tablespoons of olive oil to the skillet, and toss everything together.
8.Grate 1/4 cup parmesan cheese and sprinkle it on top of the pasta before serving. Finish by garnishing the pasta with toasted pine nuts.
