Ingredients

14 ounces smoked cooked sausage
1/4 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
3 tablespoons white wine vinegar
1/3 cup olive oil
1 garlic clove , peeled and mashed
8 ounces uncooked penne pasta , 2 1/4 cups
1 cup frozen green pea , thawed
1 cup finely chopped green onion , with green tops
2 large medium red ripe tomatoes , seeded and chopped
1/2 cup thinly sliced carrot , 1 medium carrot
1/4 cup grated parmesan cheese
1/4 cup fresh basil , julienned
additional fresh basil ( to garnish )
This Pasta and Smoked Sausage Picnic Salad is a perfect dish for enjoying outdoors, whether it's a picnic or a backyard barbecue. Instructions

1.Whisk together mustard, salt, pepper, vinegar, olive oil, and garlic in a bowl.
2.Cook pasta in boiling salted water for about 9-11 minutes. Drain and rinse under cold running water.
3.Cut sausage into 1/4 inch thick slices.
4.In a large bowl, mix together pasta, sausage, green peas, and green onions.
5.Peel and seed the tomatoes. Chop flesh into small pieces. Add into the bowl.
6.Julienne the basil leaves. Add into the bowl.
7.Add grated parmesan cheese. Pour the dressing over and toss everything to combine.
8.Cover and chill it for about 2 hours or up to a day.
9.Garnish with additional fresh basil leaves before serving.
