Ingredients

400 g fresh pasta
2 large eggplants
sea salt
olive oil ( for frying )
flour ( for dusting )
1 can plum tomatoes
2 garlic cloves ( peeled and whole )
1/4 cup extra virgin olive oil
1 tablespoon tomato paste
2 teaspoons sugar
2 sprigs fresh basil
black pepper
1/4 - 1/2 lb cheese ( parmesan ect.. )
Pasta Alla Norma is a classic Italian dish that originated in Sicily. Instructions

1.Wash eggplants and cut off both ends.
2.Cut the eggplants in slices or cubes, and place them in a colander.
3.Sprinkle the slices of eggplants with sea salt and leave them to rest for 1 hour.
4.Rinse the eggplant slices under running water and press them gently to remove the excess water.
5.Heat the olive oil in a frying pan and fry the eggplants until golden brown.
6.Set the eggplants aside on a paper towel.
7.In another pan, heat some olive oil and add the garlic.
8.Add the canned tomatoes, tomato paste, sugar and black pepper into the pan with the garlic, and bring to a boil.
9.Reduce the heat, add the eggplants, and basil, and cook for 10 minutes.
10.Cook the pasta in boiling salted water according to the package instructions, then drain.
11.Add cheese to the eggplants and sauce mixture, stir until well combined, and serve over the pasta.
