Instructions

1.Preheat the oven to 350°F (180°C).
2.Whisk together the ground almonds, white sugar, and salt in a bowl.
3.Add 1 egg and 2 egg whites to the bowl and beat until the mixture comes together.
4.Pour the mixture into an 8x8 inch (20x20 cm) baking dish lined with parchment paper and bake in the oven for 10 minutes.
5.While the crust is in the oven, whisk together the 6 eggs, 3 cups of white sugar, potato starch, and lemon juice in a large bowl.
6.Pour the mixture over the crust and bake in the oven for an additional 30-35 minutes, until set.
7.Remove from the oven and allow to cool before cutting into bars.
