Ingredients

1 grapefruit
6 seville oranges
6 firm mandarin oranges
3 dozen passion fruit
2 lemons , juice of
2 7/8 kg sugar

Instructions

1.Use a sharp knife to cut the grapefruit and orange into thin slices.
2.Place the sliced fruit in a large pot, along with the passion fruit pulp and juice and the juice of the lemons.
3.Add enough water to cover the fruit, then bring the mixture to a boil. Reduce the heat and allow the mixture to simmer for about an hour, or until the fruit is soft.
4.Remove the pot from the heat and use a potato masher to mash the fruit and release any remaining juice.
5.Strain the fruit mixture through a sieve or cheesecloth, and return the liquid to the pot.
6.Add the sugar to the liquid, stirring until it dissolves and the mixture becomes smooth.
7.Bring the mixture to a boil, then reduce the heat and allow it to simmer for about an hour, or until the desired thickness is achieved and the mixture reaches 105°C on a sugar thermometer.
8.Remove from heat, and let the marmalade sit for 20 minutes in the pot, then stir the mixture one last time before transferring to sterilized jars.
