Ingredients

1/2 cup passion fruit pulp
1 lemon , juice of
1 cup sugar
3 eggs , beaten
125 g butter

Instructions

1.In a heatproof bowl, whisk together all ingredients except for the butter.
2.Set bowl over a pot of simmering water (make sure the bottom of the bowl is not touching the water) and whisk constantly until the mixture thickens enough to coat the back of a spoon. This should take about 10-15 minutes.
3.Remove the bowl from the heat and whisk in diced butter a few pieces at a time, making sure each addition is fully incorporated before adding more.
4.Pour the Passionfruit Butter through a fine-mesh sieve and let it cool to room temperature.
5.Transfer the mixture to a sterilized glass jar and store in the refrigerator for up to 2 weeks.
