Ingredients

500 g natural thick yogurt
250 ml passion fruit pulp
80 g icing sugar , sieved
2 leaves gelatin , softened in cold water ( gold strength )
375 ml milk
300 ml thickened cream
1 vanilla bean , split and seeds scraped
4 egg yolks
160 g white sugar
125 ml olive oil
2 baby fennel bulbs
150 g white sugar
Passion Fruit Tzatziki with Olive Oil Ice-Cream is a modern take on the classic Greek tzatziki dish. Instructions

1.Passion Fruit Tzatziki:
2.Place the yogurt, passion fruit pulp and icing sugar into a bowl and mix until smooth.
3.Squeeze out the excess water from the softened gelatin and dissolve the gelatin in a hot water bath.
4.Add a spoonful of the fruit mixture to the gelatin and mix well before adding it back to the remaining fruit mixture and mixing thoroughly.
5.Pour the mixture into a container and refrigerate for 6 hours to set.
6.Olive Oil Ice-Cream:
7.Pour the milk, cream, vanilla bean and its seeds into a saucepan and gently heat until it starts to simmer.
8.Whisk the egg yolks and sugar until smooth and gradually add the hot milk mixture while whisking continuously until well combined.
9.Return the mixture back to the saucepan and heat on medium heat while stirring constantly until the mixture thickens and coats the back of the spoon.
10.Remove the mixture from the heat and stir in the olive oil and mix until well combined.
11.Transfer the mixture into a container and refrigerate until chilled.
12.When cold, churn the mixture in the ice-cream machine until it becomes soft-serve ice-cream.
13.Fennel Tuile:
14.Preheat the oven to 180°C.
15.Using a mandolin or sharp knife, slice the fennel bulbs as thinly as possible.
16.Toss the slices in the white sugar and arrange on a baking paper-lined baking sheet.
17.Bake in the oven until the fennel slices turn golden brown.
18.Remove the tuile from the oven and place them onto a wire rack to cool.
19.Assemble:
20.Scoop a generous dollop of the tzatziki into a bowl or glass.
21.Drizzle some olive oil on top of the tzatziki and place a quenelle of olive oil ice-cream on top.
22.Add a few fennel tuiles on top of the ice-cream and serve immediately.
