6 large passion fruit
100 ml milk
1 egg , seperated
40 g golden caster sugar
2 teaspoons plain flour
50 g icing sugar , for dusting

Instructions

1.Cut open the passion fruit and scoop out the pulp into a small bowl.
2.Place the milk in a saucepan and slowly bring to a gentle simmer over low heat.
3.Meanwhile, whisk the egg yolk and caster sugar together in a heatproof bowl until pale and thick.
4.Sift over the plain flour and whisk until smooth.
5.Gradually pour the hot milk onto the egg mixture, whisking constantly.
6.Return the mixture to the saucepan and cook over low heat, stirring constantly, for about 5 minutes or until the mixture has thickened.
7.Stir in the passion fruit pulp and transfer the mixture to a clean bowl.
8.Whisk the egg white until stiff peaks form.
9.Add a large spoonful of the egg white to the passion fruit mixture and gently fold in using a large metal spoon to loosen it up. Fold in the remaining egg white in two batches until just combined.
10.Spoon the mixture into 8-10 souffle dishes until two-thirds full.
11.Smooth the tops with a palette knife and chill in the refrigerator for at least 1 hour or until set.
12.When ready to serve, dust the tops with icing sugar and serve immediately.
