Instructions

1.Preheat the oven to 180°C/350°F. Line a baking tray with baking paper.
2.Cut the phyllo pastry sheets into 6 evenly sized rectangles. Brush each rectangle with melted butter and sprinkle with icing sugar. Roll up each rectangle tightly and place on the baking tray.
3.Bake the pastry rolls for 10 minutes or until golden brown. Remove from oven and allow to cool.
4.Cut open the passion fruits and scoop out the flesh into a bowl.
5.In another bowl, mix together the gelatin powder and 2 tablespoons of water and let it sit to soften.
6.In a saucepan, whisk the egg yolks and caster sugar until combined. Then, add the passion fruit pulp and cook over low heat until the mixture thickens.
7.Remove the saucepan from heat and add the softened gelatin. Stir until combined.
8.Allow the mixture to cool slightly before folding in whipped cream.
9.Pour the passion fruit mousse over the cooled pastry rolls and refrigerate for at least 4 hours before serving.
