250 g ricotta cheese
250 g soft low-fat cheese
3 eggs
2 tablespoons cornflour
50 g caster sugar
1 lime , juice and zest of , grated
4 tablespoons passion fruit , coulis and mango coulis
1 passion fruit , pulp to decorate

Instructions

1.Preheat oven to 160°C.
2.Mix together crumbled ginger snaps and 1 tbsp passion fruit coulis. Press mixture into the bottom of a lined muffin tin. Set aside.
3.In a blender, blend together ricotta cheese, low-fat cheese, eggs, cornflour, caster sugar, lime zest and juice, and 3 tbsp passion fruit coulis until smooth.
4.Pour mixture over ginger snap crusts.
5.Bake in the preheated oven for 20-25 minutes, or until golden on top.
6.Remove from oven and let cool in the fridge for at least 1 hour before serving.
