120 ml custard
1 passion fruit , halved , seeds and pulp scraped out
25 g butter

Instructions

1.Preheat the oven to 180°C/160°C fan/gas 4.
2.Grease a large souffle dish with butter.
3.Sprinkle the caster sugar over the bottom of the souffle dish.
4.In a large mixing bowl, whisk the egg whites until they form stiff peaks.
5.Gently fold in the custard and the passion fruit seeds and pulp until well combined.
6.Spoon the mixture into the souffle dish, filling it almost to the top.
7.Bake in the preheated oven for 10-15 minutes, or until the souffle is risen and golden brown on top.
8.While the souffle is cooking, melt the butter in a small frying pan over medium heat.
9.Add the caster sugar and stir until it has dissolved.
10.Add the banana halves and cook for 1-2 minutes on each side, until they are caramelised.
11.Remove the souffle from the oven and serve immediately with the caramelised bananas on top.
