Ingredients

6 cups farmer cheese , 3 Lbs or 6 cups large-curd cottage cheese
6 large egg yolks
1 1/2 cups confectioners ' sugar
1 1/2 cups heavy cream
1/2 cup candied fruit
1/2 cup raisins , Seedless
1/2 cup almonds , Toasted , Slivered
1/2 teaspoon lemon , rind of , Grated
1/2 lb butter , NO Margarine
3 teaspoons vanilla extract
2 large egg yolks
1/4 cup madeira wine
1/2 teaspoon lemon , rind of , Grated
3 tablespoons confectioners ' sugar
1 tablespoon lemon juice
1 tablespoon rum , Light
Paskha is a traditional Russian dessert that is usually served during Easter celebrations. It has a rich and creamy texture that is perfect for dessert lovers. The cheese-based dessert is made with a combination of farmer cheese, eggs, sugar, heavy cream, and candied fruits. The dish is usually molded into a pyramid shape and served with a sweet glaze or fruit syrup. Instructions

1.In a large mixing bowl, combine the farmer cheese, egg yolks and sugar.
2.In another large mixing bowl, whip the heavy cream until stiff peaks form then fold into the cheese mixture.
3.Add the candied fruits, raisins, almonds, lemon rind, 2 egg yolks, vanilla extract and madeira wine to the cheese mixture and blend well.
4.Line the paskha mold with dampened muslin, then fill with the cheese mixture.
5.Fold excess muslin over top of the cheese mixture, then cover with a flat board and a weight.
6.Chill in the refrigerator for at least 24 hours or until firm.
7.To make the sauce: in a small bowl, combine the lemon rind, confectioners' sugar, lemon juice and rum.
8.Beat in the butter until smooth.
9.Serve the paskha inverted onto a serving platter, spooning the sauce over it.
