2 packages cream cheese , softened | |
1 container cottage cheese | |
1 container sour cream | |
1/4 cup butter , melted | |
1 cup white sugar | |
1/4 teaspoon lemon extract | |
1 teaspoon vanilla extract | |
1/2 cup finely chopped blanched almond | |
1/2 cup currants |
1. | Line a pashka or cheese mold with cheesecloth. |
2. | In a large mixing bowl, combine the cream cheese, cottage cheese, and sour cream. Beat until smooth. |
3. | Mix in the melted butter, sugar, lemon extract, and vanilla extract. Stir until well combined. |
4. | Fold in the chopped almonds and currants. |
5. | Pour the mixture into the prepared mold, filling it to the top. Fold the cheesecloth over the top and chill in the refrigerator for at least 12 hours or overnight. |
6. | To serve, turn the pashka out onto a serving plate and remove the cheesecloth. |
