6 cups hot chicken stock

1 teaspoon brown sugar
2 tablespoons minced gingerroot
3 garlic cloves , minced
1 cup dried cranberries
1 cup roasted pistachios
1/4 teaspoon cardamom
salt , to taste
1/2 cup minced parsley
3 scallions , sliced thinly

Instructions

1.Rinse the rice well under running water and let it soak in cold water for 20 minutes
2.In a large saucepan or Dutch oven, bring the chicken stock to a boil over high heat
3.Drain the rice and add it to the boiling chicken stock, along with the ground cardamom
4.Cover the pot and reduce heat to low
5.Cook the rice for about 45 minutes, or until all the liquid has been absorbed and the rice is tender
6.In a large skillet, heat the peanut oil over medium-high heat
7.Add the onion and cook until softened
8.Add the brown sugar, ginger, garlic, and cranberries to the skillet and cook for 5 minutes
