Ingredients

2 young partridges , trussed , larded and livers reserved
3/8 cup butter
2 tablespoons chopped cooked ham
2 tablespoons flour
1 1/4 cups dry white wine
4 sprigs parsley
1 sprig thyme
1 bay leaf , tied together in a cheescloth bag
1/2 small orange , rind of , pared
1 tablespoon tomato puree ( tomato sauce or paste )
1/2 teaspoon salt
1/4 teaspoon black pepper
6 cloves garlic , boiled in salted water for 10 minutes and drained
1/4 cup fresh breadcrumb
2 tablespoons cooked ham , finely chopped
1/2 tablespoon fresh parsley , chopped
1 clove garlic , crushed
1 small egg , lightly beaten
Partridges catalan style is a traditional Catalan recipe dating back hundreds of years. The dish is prepared by browning the birds, then cooking them slowly in a rich sauce of wine, oranges, and herbs. The birds are then topped with a garlic and ham crust and grilled until crispy. Instructions

1.Preheat oven to 350°F (175°C).
2.Melt the butter in a flameproof casserole dish and brown the partridges all over.
3.Remove the partridges and soften the ham in the same pan.
4.Add the flour and cook for 2 minutes over low heat, stirring constantly.
5.Gradually add the wine, stirring until smooth.
6.Add the partridges back to the casserole and add enough hot water to cover the partridges.
7.Add the parsley, thyme, bay leaf, and orange rind, tomato puree, salt and pepper to taste.
8.Bring to a boil, cover, and bake in the oven for 40 minutes.
9.Remove the birds from the casserole, cover with foil, and keep warm.
10.Mash the garlic cloves to a paste and mix with the breadcrumbs and ham.
11.Grill for around 5 minutes to crisp before placing it on top of the partridges. Drizzle with the leftover sauce to finish.
