Ingredients

1/2 cup unsalted butter , softened
1 tablespoon sugar
1/2 cup fresh grated parmesan cheese ( no , not the sandy stuff that comes in a can )
1/4 teaspoon black pepper or 1/8 teaspoon cayenne pepper
1/2 teaspoon chopped fresh rosemary ( or thyme ) ( optional )
1 1/4 cups flour
Parmesan shortbread is a variation on the classic Scottish cookie that is typically sweet and made with sugar and flour. This savory version swaps sugar for parmesan cheese and adds a touch of black pepper and rosemary for a sophisticated and savory flavor. Instructions

1.Preheat the oven to 350°F (176°C).
2.In a large bowl, cream the butter and sugar together using an electric mixer until light and fluffy.

4.Gradually add in the flour, mixing until the dough comes together.

7.Place the shortbread on a baking sheet lined with parchment paper and chill for 10 minutes.
8.Bake for 15-20 minutes or until the edges are golden brown.
9.Allow the parmesan shortbread to cool on a wire rack before serving.
