Originating from Australia, damper has been a popular bread option among travellers and adventurers who often carried minimal equipment during their journeys. It is prepared by mixing flour, salt, and water, which is then baked directly on hot coals. Over the years, variations have been created by adding milk, cheese, or herbs to the basic recipe. Parmesan & Garlic Damper Rolls are a savoury take on the traditional damper recipe, infused with garlic, chives and of course, parmesan. These delicious rolls are a perfect addition to your bread basket and make a great side to soups and stews.

Instructions

1.Preheat oven to 200°C/180°C fan-forced.
2.Lightly grease a 20cm round cake pan. Sift flour into a bowl. Rub butter into flour. Stir in parmesan, chives and garlic. Add water and milk. Stir until mixture comes together to form a soft dough.
3.Knead dough on a floured surface for 2 to 3 minutes or until smooth. Divide into 8 portions. Roll each to a 7cm round. Place rounds, just touching, in prepared pan. Sprinkle with extra parmesan.
4.Bake for 20 to 25 minutes or until golden. Stand in pan for 5 minutes. Transfer to a wire rack to cool.
