Ingredients

1 kg medium eggplant
1 kg ripe tomatoes
1 bunch fresh basil
100 g parmesan cheese , grated
300 g mozzarella cheese
2 garlic cloves
1/2 onion
canola oil ( for frying )
salt and pepper

Instructions

1.Peel and wash the eggplant and slice into 1/4 inch thick rounds. Salt both sides of each slice and place them into a colander to drain.
2.Cut the tomatoes into small pieces, chop the onions and garlic, and shred the basil leaves.
3.Rinse the eggplant slices with water and pat dry.
4.In a frying pan, heat some canola oil to a medium-high temperature and fry the eggplant slices until golden brown on both sides.
5.Preheat the oven to 355°F (180°C).
6.In a saucepan, heat some olive oil and fry the onions and garlic for a minute or two.
7.Add the tomato pieces, salt, pepper and shredded basil leaves to the saucepan and cook on low-medium heat until the tomato has softened.
8.In a baking dish, add a layer of fried eggplant slices followed by a layer of tomato sauce, a layer of grated Parmesan cheese and some mozzarella cheese.
9.Repeat the layering procedure until all ingredients are used up, finishing with a layer of tomato sauce and mozzarella cheese on top of the dish.
10.Bake in the oven for about 20-25 minutes, or until the cheese has melted and the dish is golden brown on top.
