4 chicken breast fillets ( about 150g each )
150 g rindless bacon
150 g mixed salad greens , washed and dried
4 medium ripe tomatoes , cut into chunks
1/4 cup torn basil leaves
4 green onions , finely sliced
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon fresh orange juice
2 teaspoons sun-dried tomato paste
salt & fresh ground pepper

Instructions

1.Preheat oven to 180C degrees.

8.In a small bowl, whisk together the olive oil, balsamic vinegar, fresh orange juice, and sun-dried tomato paste to make the dressing.
9.In a large bowl, gently toss together the mixed salad greens, tomatoes, basil leaves, and green onions.
10.Divide the salad mixture between 4 plates, then top each plate with a chicken fillet and bacon.
11.Drizzle the dressing over the salad, then season with salt and fresh ground pepper to taste.
