Parmentier Potato Salad is a French-style dish that is typically served as a side dish or warm salad. Instructions

1.Finely chop the red onion and garlic.
2.Wash and cook the green lentils in a pot of boiling salted water for about 20 minutes, until tender.
3.At the same time, wash and cook the new potatoes in another pot of boiling salted water until they are tender and easily pierced with a fork. Cut them into quarters once they have cooled.
4.In a pan, heat the olive oil. Add the mustard seeds, then add the onions and garlic, and cook them until they are translucent and fragrant.
5.In a bowl, whisk together the olive oil, balsamic vinegar, and lemon juice.
6.Add the cooled lentils and potatoes to the bowl and toss them together.
7.Pour in the dressing and toss everything together. Add the chopped fresh coriander and salt and freshly ground black pepper to taste. Serve chilled.
