The Paris-Brest is a French pastry that was created in the late 1800s to commemorate the annual Paris-Brest-Paris bicycle race. The pastry is made from choux pastry dough and is shaped like a bicycle wheel, with a ring of dough and a creamy filling in the center. The pastry is usually topped with sliced almonds and confectioners' sugar for a decorative touch. The crunchy texture of the pastry contrasts perfectly with the smooth, creamy filling, making it a popular dessert among pastry lovers.

Instructions

.Preheat the oven to 425°F (218°C).
.In a medium saucepan, combine the milk, water, salt, and butter. Heat over medium heat, stirring constantly, until the butter has melted.
.Add the flour and stir constantly to combine. Continue stirring until the mixture forms a ball and pulls away from the sides of the pan.
.Remove the pan from the heat and let cool for 1-2 minutes.
.Add one egg at a time to the mixture, stirring vigorously to combine each egg into the dough before adding the next.
.Transfer the dough to a piping bag with a large star tip.
.Pipe a circle of dough onto a baking sheet lined with parchment paper, then pipe a second circle atop the first. Pipe a third circle around the edge of the second circle, leaving a hole in the center for the filling.
.Sprinkle the sliced almonds over the top of the dough.
.Bake the pastry for 35-40 minutes, or until golden brown and crispy.
.Let cool completely.
.In a large bowl, whip the heavy cream and vanilla extract together until stiff peaks form.
.Fold in the pastry cream.
.Fill the center of the pastry with the cream.
.Sprinkle the confectioners' sugar over the top of the finished pastry.
