Ingredients

8 ounces red lentils
2 cups water
1 small onion , chopped
2 ripe tomatoes , chopped
1 3/4 ounces unsweetened coconut and 1 cup water ( or 1 cup unsweetened coconut milk )
2 small green chilies , chopped fine
1/4 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/8 teaspoon asafoetida powder ( optional )
1 teaspoon salt , to taste
1/2 lb greens , chopped
2 tablespoons oil
1 teaspoon cumin seed
1/2 teaspoon mustard seeds
1 small onion , finely chopped
10 curry leaves ( optional )
Parippu, also known as paruppu in Tamil, is a popular lentil stew that is native to South India. It is a staple food in most Indian households and is often served as a side dish or a main course with steamed rice, chapati, or dosa. Parippu is a simple yet flavorful dish made with red lentils, onions, tomatoes, coconut milk, and spices. Instructions

1.Rinse the lentils thoroughly and add them to a large pot with 2 cups of water and chopped onions.
2.Bring it to a boil, then turn the heat down and let it simmer for 10 minutes.
3.Add chopped tomatoes, unsweetened coconut (with water) or coconut milk, green chilies, turmeric, ground cumin, ground coriander, asafoetida powder (optional), and salt.
4.Mix well and let it simmer for 5-7 minutes.
5.Add the chopped greens and continue cooking for 10-12 minutes.
6.In a separate pan, heat oil and add cumin seeds, mustard seeds, and finely chopped onions. Cook until the onions turn golden brown.
7.Add curry leaves and cook for another 1-2 minutes.
8.Add this tempering to the lentil stew and stir well. Serve warm with rice or bread.
