Ingredients

1/2 lb feta cheese
1/2 lb fresh mizithra cheese
1 cup grated kasseri cheese
1/4 cup walnuts , finely ground
2 -3 tablespoons heavy cream
1 lb ground beef
2 tablespoons olive oil
salt , to taste
pepper , to taste
1/4 cup red wine ( NOT sour )
3 tablespoons butter
1 can tomato paste
1/2 teaspoon oregano
2 cups water
1/2 tablespoon salt
1 tablespoon olive oil
3 -4 quarts water
1/2 lb rigatoni pasta
grated kefalotiri , to taste
Paragemista Makaronia (Stuffed Rigatoni) is a traditional Greek dish that is typically served on special occasions. The dish consists of rigatoni pasta stuffed with a mixture of cheeses and nuts, which is then baked in a tomato-based sauce. Instructions

1.Cook the rigatoni pasta in salted boiling water until al dente and drain.
2.In a large bowl, mix the feta cheese, mizithra cheese, kasseri cheese, walnuts, and heavy cream together in a bowl until well combined.
3.Stuff the cheese mixture into the rigatoni. Set the stuffed pasta aside.
4.In a large saucepan, brown the ground beef in olive oil and season with salt and pepper to taste.
5.Add the red wine and cook until it evaporates then add the butter, tomato paste, oregano, and water. Simmer the sauce for 20 minutes.
6.Preheat the oven to 350°F. Grease a baking dish with olive oil. Place the stuffed rigatoni into the baking dish. Pour the sauce evenly over the top of the stuffed rigatoni then sprinkle the grated kefalotiri cheese over the top.
7.Bake the dish until the cheese is golden brown for approximately 35 minutes.
