Ingredients

1 kg chuck steak ( or blade steak )
2 tablespoons flour
1/2 teaspoon ginger powder
1 teaspoon salt
pepper
2 tablespoons peanut oil
2 stalks celery , sliced
3 onions , sliced
6 medium carrots , sliced
425 g tomatoes
1 cup stock
1/3 cup vinegar
1/2 cup brown sugar
425 g crushed pineapple , drained and liquid reserved
1/2 cup raisins
Paradise Casserole by June is a hearty and healthy casserole dish. This recipe has a tangy and sweet flavor from pineapple, vinegar, and brown sugar. The beef and vegetables are cooked in a casserole dish and baked in the oven. The slow cooking makes the beef tender and the combination of fruits and vegetables make it a healthy and complete meal. Instructions

1.Preheat the oven to 180C (350F).
2.Cut the beef into 2cm cubes and coat with flour, ginger powder, salt, and pepper.
3.In a large skillet, heat peanut oil over medium-high heat and brown the beef cubes in batches until browned.
4.Add celery, onions, and carrots to the skillet and cook until the vegetables are tender.
5.Stir in tomatoes, stock, vinegar, brown sugar, and reserved pineapple juice. Simmer for about 5 minutes.
6.Transfer the mixture to a casserole dish and stir in the drained crushed pineapple and raisins. Cover the casserole with a lid.
7.Bake for 1 hour and 30 minutes or until the beef is tender.
