Ingredients

1 lb fresh spinach , chopped
2 tablespoons olive oil
2/3 cup onion , finely diced
2/3 cup fresh mushrooms , sliced
1 teaspoon minced fresh garlic

3 tablespoons margarine ( I would probably use butter )
3 tablespoons flour
2 cups milk
16 ounces sour cream
1 can chopped green chilies
1 jar diced pimientos , rinsed
1/2 teaspoon salt
1/2 teaspoon hot sauce , such as Tabasco ( or to taste )
1 cup grated swiss cheese
12 six-inch blue corn tortillas
1 1/4 cups additional grated swiss cheese
chopped tomato
chopped black olives
salsa

Instructions

1.Heat olive oil in a large saucepan over medium heat. Add onions and mushrooms and cook until softened.

4.In the same pan, melt margarine and then add flour. Cook for 2 minutes, stirring constantly.

6.Add in the sour crème, green chilies, and pimientos and whisk together.
7.Add salt and hot sauce to taste and let simmer for 10 minutes.
8.Arrange spinach on each tortilla topped with cheese and mushroom-onion mixture. Roll up each tortilla and place seam-side down in a 9x13 inch baking dish.
9.Pour sauce over the tortillas. Sprinkle with remaining cheese, tomatoes, olives and salsa.
10.Bake in preheated oven at 350°F for 30 minutes or until cheese is melted and bubbly.
