Ingredients

1 tablespoon butter
2 spring onions , finely chopped
1 teaspoon garlic , crushed
5 medium mushrooms , finely sliced
1/4 teaspoon chili flakes
1 teaspoon paprika
1 tablespoon sherry wine
2 tablespoons red wine
2 tablespoons water
2 tablespoons sun-dried tomatoes ( tapanade or paste )
2 tablespoons Greek yogurt
1 slice toast
Paprika mushrooms with Greek-style yoghurt is a delicious vegetarian dish that can be a great appetizer or side dish. Instructions

1.Melt the butter in a pan over medium heat.
2.Add the spring onions and garlic, and fry until softened.
3.Add the mushrooms, chili flakes and paprika. Fry until the mushrooms are cooked.
4.Add the sherry wine, red wine, water and sundried tomatoes. Stir well and simmer for a few minutes until the sauce is reduced.
5.Toast the slice of bread and cut into small pieces for serving.
6.Plate the mushroom mixture and top with Greek yogurt. Sprinkle some paprika powder and serve with the toasted bread.
