Instructions

1.Place the diced potatoes in a large pot and add enough cold water to cover them. Add 1 tablespoon of salt and bring the water to a boil over high heat. Reduce heat and simmer for about 12-15 minutes, until the potatoes are fork-tender, but not falling apart.
2.Meanwhile, in a large skillet, heat 2 tablespoons of olive oil over medium-low heat. Add sliced onions and sauté them for about 5 minutes, until they are soft but not browned. Add the garlic, red pepper strips, and paprika, and stir well to combine. Continue cooking for another 2-3 minutes, until the peppers are slightly softened.
3.In a separate skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the chorizo sausage and cook for 3-5 minutes until it's starting to brown.
4.When the potatoes are done, drain them and add them to the pan with the peppers and onions. Add the cooked chorizo and stir everything together. Cook for another 5-7 minutes, until all the flavors have melded together and everything is heated through.
5.Season with black pepper and serve hot.
