1 cup tomatoes , chopped

Instructions

1.Rinse the pinto beans with cold water and let them soak in a bowl of cold water for a few hours or overnight.
2.Drain and rinse the soaked beans, then place them in a large pot with 3 quarts of water, bacon, garlic, half of the cilantro, chopped onion, cumin, onion powder, and salt.
3.Cook on medium heat for about 2 hours, or until the beans are tender.
4.Add the chopped tomatoes and remaining cilantro to the pot and cook for an additional 10 minutes.
5.Serve hot, garnished with additional cilantro if desired.
