Ingredients

1 lb chicken liver
2 tablespoons butter
2 tablespoons olive oil
5 scallions , white part only , minced
2 shallots , minced
2 garlic cloves , minced
1/2 lb fresh mushrooms , thinly sliced
1/2 cup dry vermouth
1 cup heavy cream
2 tomatoes , skinned , seeded , and chopped
1/2 teaspoon sugar
1 1 tablespoon dried basil ( we prefer the Italian seasoning , personal preference ) or 1 tablespoon italian seasoning , - 1 tsp ( we prefer the Italian seasoning , personal preference )
1/2 teaspoon dried sage ( optional )
salt
fresh ground pepper
crushed red pepper flakes ( a pinch or two )
2 tablespoons vegetable oil
1 lb pappardelle pasta ( if you are not making your own pasta , substitute boxed fettuccine )
chopped fresh parsley
Pappardelle with chicken livers and onions is a classic Italian dish that is loved by many. It is a hearty and comforting meal that is perfect for colder weather. The tender chicken livers and earthy mushrooms are cooked in a rich and creamy sauce that is flavored with garlic, vermouth, and dried Italian herbs. Instructions

1.In a large pot, bring salted water to a boil and cook pasta according to package instructions.
2.While the pasta is cooking, heat two tablespoons of butter and two tablespoons of olive oil in a large pan over medium heat.
3.Add five minced scallions (white part only), two minced shallots, and two minced garlic cloves to the pan and cook until translucent, stirring occasionally.
4.Add 1 lb of chicken liver to the pan and cook until browned on the outside, stirring occasionally.
5.Add 1/2 lb of fresh mushrooms to the pan and cook until softened, stirring occasionally.
6.Add 1/2 cup of dry vermouth to the pan to deglaze, scraping the brown bits from the bottom of the pan.
7.Add 1 cup of heavy cream, two chopped and seeded tomatoes, 1/2 teaspoon of sugar, 1 tablespoon of dried Italian seasoning, 1/2 teaspoon of dried sage (optional), and salt, fresh ground pepper, and a pinch or two of crushed red pepper flakes to the pan.
8.Cook for 5-10 minutes until the sauce has thickened slightly.
9.Drain the cooked pasta and add it to the pan with the sauce. Toss to combine.
10.Garnish with chopped fresh parsley and enjoy!
