Ingredients

4 large potatoes , peeled and cubed
1/2 teaspoon salt
1 tablespoon vegetable oil
1/2 cup chopped onion
1 green bell pepper , chopped
3 cloves garlic , minced
1 pound ground beef
1 teaspoon salt
2 teaspoons ground cumin
1 teaspoon ground black pepper
4 teaspoons tomato paste
1 tablespoon distilled white vinegar
4 eggs
2 cups dry bread crumbs
1 cup all-purpose flour
1 quart vegetable oil for frying
Papa Rellenas are a popular dish in many South American countries, particularly in Peru where they are considered a national dish. These fried stuffed potatoes are a hearty and filling food, perfect for a family dinner or as party appetizers. They are traditionally filled with ground beef, but other variations with chicken, cheese, or vegetables also exist. These crispy potatoes are sure to please any crowd with their flavorful filling and crispy exterior.

Instructions

1.Boil the potatoes until tender, then mash and season with 1/2 teaspoon of salt.
2.In a separate pan, sauté the onion, green bell pepper, and garlic in 1 tablespoon of vegetable oil until softened.
3.Add the ground beef, 1 teaspoon salt, 2 teaspoons ground cumin, and 1 teaspoon black pepper to the pan and cook until browned.
4.Mix in the tomato paste and vinegar, then remove from heat and let cool.
5.Scoop portions of the mashed potatoes and shape them into balls, making an indent in the center to fill with beef mixture.
6.Add a spoonful of the beef mixture to each potato ball and form the mashed potatoes around it to make a stuffed ball.
7.Heat 1 quart of vegetable oil in a deep skillet until hot, around 350°F.
8.Beat 4 eggs in a bowl and prepare a dish of bread crumbs and another of flour.
9.Roll each stuffed potato ball in the flour, then dip in the beaten eggs, and roll in the bread crumbs.
10.Gently place each ball in the hot oil and fry until golden brown, around 5-7 minutes per side. Drain on paper towels before serving.
