Ingredients

2 lbs red potatoes
2 tablespoons dried onion , minced-divided
4 tablespoons olive oil , divided
1 garlic clove , minced
1 jalapeno , seeded and chopped
1 lb ground beef
1/2 teaspoon dried oregano
1/2 teaspoon cilantro ( optional )
1/4 teaspoon salt ( to taste )
1/4 teaspoon black pepper ( to taste )
1 can black beans , drained and rinsed
1 can sliced mushrooms , undrained
1 can tomato sauce
16 ounces cheddar cheese , shredded , divided

Instructions

1.Preheat oven to 375°F.
2.Cut the red potatoes into small cubes and place in a large bowl.
3.Add 1 tablespoon of minced dried onion, 2 tablespoons of olive oil, minced garlic, and chopped jalapeno to the bowl and toss to coat the potatoes.
4.Spread the potato mixture out in a single layer on an ungreased baking sheet and bake for 20 minutes or until the potatoes are tender.
5.While the potatoes are cooking, heat the remaining olive oil in a large skillet over medium-high heat.
6.Add the ground beef, remaining tablespoon of minced onion, oregano, cilantro, salt, and black pepper. Cook for about 10 minutes or until the beef is browned and cooked through.
7.Add the drained and rinsed black beans, undrained sliced mushrooms, and tomato sauce to the skillet.
8.Cook for about 5 minutes or until the sauce is heated through.
9.In a large greased casserole dish, layer half of the potato mixture, half of the beef and mushroom mixture, and half of the shredded cheddar cheese. Repeat the layers one more time.
10.Cover the casserole dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
