2 1/2 lbs red potatoes
1/4 cup butter
1/2 cup sour cream
1 jalapeno pepper
1 anaheim chili
1 teaspoon garlic powder
1 tablespoon salt

16 ounces velvetta mexican cheese
Papas, also known as Mexican mashed potatoes, is a popular Mexican American side dish. A mixture of tender red potatoes mashed with butter, sour cream, garlic powder, along with the flavors of jalapeno and Anaheim chili peppers, Papas are the perfect side dish for any Mexican-style meal. Instructions

1.Rinse and scrub the red potatoes. Cut them into small chunks and cover with water in a large pot.
2.Bring the water to a boil and reduce heat to maintain a steady simmer. Cook the potatoes for 12-15 minutes, or until easily pierced with a fork.
3.While the potatoes are cooking, remove the seeds and membranes from the jalapeno pepper and anaheim chili, then chop them finely.
4.Once the potatoes are cooked through, drain them and return them to the pot.
5.Add butter, sour cream, garlic powder, chopped jalapeno and anaheim chili, salt, and pepper to the pot. Mash with a potato masher until desired consistency.
6.Over low heat, add the Velveeta cheese and continue to stir until melted and well incorporated. Serve hot.
