3 idaho baking potatoes
4 large poblano peppers ( the ones that resemble a smaller , darker green bell pepper )
2 medium onions , sliced into rings
1/4 cup crumbled mexican queso fresco ( if unavailable , use feta cheese )
2 -3 garlic cloves , minced
salt
pepper
2 -3 tablespoons vegetable oil

Instructions

1.Preheat the oven to 375 degrees F.
2.Peel the potatoes and cut them into cubes.
3.Cut the poblanos into strips and remove the seeds.

5.Spread the mixture in a single layer on a baking sheet.
6.Cover the sheet with aluminum foil and bake for 20-25 minutes.
