Papas Arrugadas, also known as 'wrinkled potatoes,' is a traditional dish from the Canary Islands of Spain. This simple yet flavorful dish features small baby potatoes boiled in salty water until their skins are wrinkled like an old man's face. The high salt concentration on the potatoes' skin gives them their distinctive flavor and texture, while the creamy interior is perfect for soaking up any accompanying sauce. Papas Arrugadas is often served with a side of mojo sauce, a flavorful blend of garlic, red pepper, cumin, and olive oil. This dish is a favorite among locals and tourists alike and is a staple on many restaurant menus in the Canary Islands.

Instructions

1.Rinse and scrub the baby potatoes to remove any dirt.
2.In a large pot, add enough water to cover the potatoes completely. Add in the salt and lemon slices and stir to combine.
3.Bring the water to a boil and then reduce the heat to low. Simmer the potatoes for about 20-25 minutes, or until they are tender and the skins are wrinkled.
4.Drain the potatoes and reserve about 1/4 cup of the cooking liquid.
5.Return the potatoes to the pot and place it back on the stove over low heat. Add in the reserved cooking liquid and toss the potatoes until they are evenly coated with salt. Stir continuously for about 5-7 minutes, until the salt forms a white crust on the potatoes.
6.Serve hot with a side of mojo sauce.
